How do I remove a player from my team or hand over the captaincy?

Both actions live in the three dot menu next to a player in your team roster, and only the team captain sees it. Tap the dots next to the player and choose Assign captain to hand your role over, or Remove from team to take them out of the squad. Removing a player is an ordinary action, not a destructive one: they simply leave the squad and the slot frees up for somebody else. The menu does not appear on your own row, because a captain does not remove themselves and cannot assign the captaincy to themselves. A player can be made captain even when they hold a different role in a permanent team: the captain of a team inside a game is a role for that game only.

In a pickup game your permanent team joined, the rules are stricter. Removing a teammate also takes them out of the game, and the money goes back to whoever paid for their spot (normally you); if it is close to kickoff, the organizer’s cancellation fee is charged to that payer, not to the teammate. You can only remove players of your permanent team; a solo player the organizer added to your side to fill it can only be removed by the organizer. Only a teammate who is already in the game can get the captaincy. “Delete team” takes the whole team out of the game, each spot refunded to its payer. The organizer can do the same and then every spot is refunded in full with no fee. None of this can change after the schedule is generated or the game starts.
